My favorite vegetable shows up in yet another way. I love the orange sweet potato so much so that I grow it just to have it consistently. I didn’t think it was possible to cook it au gratin, but this dish proves me wrong! We slice the potatoes, and bake them in a cream sauce and grate gruyere cheese on top. You also have the option to include tasty bacon which, makes it richer and super flavorful.
