Garlic Roasted Artichokes

These artichokes are another of our farm produce. I started growing them in 2018..and I harvested my first fruit late in 2019. I cannot tell you how happy I was when they finally produced. I’m not sure when I first fell in love with artichokes. May be it was the artichokes in the Quattro Stagione Pizza or the Spinach and Artichoke dip either way I can’t get enough of these vegetable or flower?? I know they look intimidating but don’t be scared. We actually harvest the flower head before it flowers.

For this dish I prepare it quite simply by cleaning and roasting them with a garlic, lemon, olive oil and salt and then broiling them at the end with the roasted garlic paste with butter.

How do you eat them? Well, I start with the petals and break them down and suck the lower part of the leaf which is tender briny and creamy and work my way towards the heart.
